This tasty vegetarian recipe for healthy black bean soup can be enjoyed by the whole family serves 4 to 6 people.
Looking through the list ingredients you can see just how good much good this recipe will do you and because I like spicy food there’s an option to add chilli flakes for that extra kick.
Black Bean Soup
- 2 Tbsp olive oil
- 2 onions, chopped
- 3 celery sticks, finely chopped
- 1 large carrot, peeled and sliced into thin rounds
- 6 garlic cloves, minced
- 4 tsp cumin
- ½ tsp chilli flakes (optional)
- 4 cans of black beans, washed
- 900 ml vegetable stock
- Sea salt and freshly ground black pepper
How To Make Black Bean Soup
Heat the olive oil in a large Dutch oven or large pan over medium heat.
Add the onions, celery, carrot and a pinch of salt.
Stir occasionally and cook until the vegetables are soft – 10 to 15 minutes.
Add the the garlic, cumin and red pepper flakes and cook for about 30 seconds.
Pour in the beans and broth and simmer over medium to high heat.
Maintain a gentle simmer, until the beans are very tender- about 30 minutes.
Puree about one third of the soup in a blender and add the pureed soup to the pot.
Salt and pepper to taste.
