Cheese, Tomato And Onion Omelette
- 1 large or 2 medium sliced tomatoes
- Drizzle of olive oil
- 2 large eggs
- 1 tsp finely grated parmesan or cheddar cheese
- 1 spring onion, finely sliced
How To Make Cheese, Tomato And Onion Omelette
Toss the tomatoes with the parsley and extra-virgin olive oil in a bowl.
Place the eggs, cheese and spring onion in a bowl and mix in with a fork.
Add salt and pepper to taste.
Drizzle a little olive oil the oil in a frying pan over a medium heat.
Pour in the egg mix coating all of the pan.
When the egg is almost all cooked and the bottom is golden flip it over and cook for 1 minute.
When the omelette is cooked slide it out of the pan and onto a plate.
Season the tomato, tip it onto one half of the omelette, then fold the other half over and you’re done.
