- 1 red onion, chopped
- 1 courgette, thickly sliced
- 1 red pepper, chopped
- Handful of small tomatoes
- 1 tbsp coconut oil
- 2 garlic cloves, minced
- 1 tsp dried basil
- 1 can kidney beans
- 1 can of good quality chopped tomatoes
How To Cook Easy Cook Vegetarian Chilli
Heat oven to 200C/180C fan/gas 6.
Place the coconut oil, onion, courgette, pepper and tomatoes in a casserole dish/dutch oven and cook for 15 minutes.
Add the garlic, beans and can of chopped tomatoes and season with salt and pepper.
Add the dried basil.
Cook for another 10-15 mins until piping hot.
Serve with plain boiled rice.
