This tasty one-pot Spanish Prawn and Rice recipe is great because you can make lots and then store in the fridge or take leftover to to work the following day to help you to eat healthily.
One-Pot Rice And Prawns
- 1 sliced onion
- 1 green and 1 red pepper deseeded and sliced
- 2 crushed garlic cloves
- 1 tbsp olive oil
- 250g basmati rice
- 400g chopped tomato
- 200g raw peeled prawns
How To Make One-Pot Rice And Prawns
Boil the kettle.
Use a non-stick frying pan or shallow pan with a lid to fry the onions, peppers and garlic in the oil.
Use a high heat for approximately 3 minutes.
Add the rice and chopped tomatoes with 500ml boiling water, cover, then cook over a high heat for 12 mins.
Uncover then stir.
The rice should be almost tender.
Add the prawns and a little more water if the rice is looking dry.
Cook for another minute until the prawns are just pink and the rice is tender.
