Now that the weather is hotting up you’ve no doubt thought about a barbecue so today’s vegetarian recipe for barbecue sweet potato wedges is a healthy one that all the family can enjoy.
Barbecue Sweet Potato Wedges
Ingredients:
- 3 large sweet potatoes
- 1 Tablespoon olive oil
- 1 Tablespoon fresh thyme
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground pepper
- Sprinkling of cinnamon
How To Make Barbecue Sweet Potato Wedges
Thoroughly scrub and wash the sweet potatoes and place them into cold salted water then bring to a boil.
Simmer for about 10 minutes, drain and allow to cool.
Slice potatoes in half length ways and slice length ways again into wedges.
Mix together olive oil, salt, pepper, fresh thyme and cinnamon and coat the sweet potato wedges.
Lightly oil the barbecue and cook potatoes until grill marks appear and potatoes are cooked through, flipping once – total cooking times is roughly 6 to 7 minutes.
