In keeping with the spirit and tradition of Fitter Stronger You recipes, not only is this carrot and coriander soup a tasty little meal but it uses very little ingredients.
All the ingredients are fresh and you can really taste the difference between shop bought and home made versions.

Carrot And Coriander Soup
- 1 tablespoon of olive oil
- 4 large carrots, peeled and roughly chopped
- Half a large onion, roughly chopped
- 900ml vegetable stock
- Large bunch of roughly chopped fresh coriander
How To Make Carrot And Coriander Soup
Heat the olive oil in a large saucepan over medium heat.
Saute the carrots and onion for a few minutes until the onion has softened a little.
Pour in the vegetable stock and add the coriander.
Bring to the boil, and cook until the carrots are tender, about 10 minutes.
Remove from heat and allow to cool slightly.
Use a hand blender or food processor to puree the soup.
Serve with crusty bread.
