This lovely healthy one-pot chicken couscous recipe hits the spot.
The ginger and harissa really gives the couscous a powerful flavour which would otherwise be missing.
Try it out.
- 1 tbsp olive oil
- 1 thinly onion sliced
- 200g diced chicken breast
- Thumb sized fresh root ginger
- 1-2 tbsp harissa paste
- 10 dried apricots
- 220g can of rinsed and drained chickpeas
- 200g couscous
- 200ml hot chicken stock
- handful of chopped coriander to serve
How To Make Chicken Couscous
Cook the onion for 1-2 minutes in a large frying pan with the olive oil until soft.
Add the chicken and cook for 7-10 minutes until cooked through and the onions have turned golden.
Grate in the ginger and stir in the harissa and cook for 1 minute.
Add the apricots, chickpeas and couscous then pour over the stock and stir.
Cover with a lid or tightly cover the pan with foil and leave for about 5 mins until the couscous has soaked up all the stock and is soft.
Fork to separate the couscous and garnish with coriander to serve.
