So I’m always on the hunt for different ways I can flavour the bird before I shove it in the oven for for an hour or two.
What’s great about cooking whole chicken is that once it’s seasoned/spiced you simply leave it in the oven till it’s done.
This recipe is a new one and when I tried it I was pleasantly surprised because it’s so easy and the ingredients list is well… short.
Super convenient, wholesome food – win win!
- 1 whole chicken
- Salt and pepper
- 1 large lemon, sliced
- 6 cloves garlic, sliced
- 6 sprigs fresh thyme
Preheat oven to 160 degrees C / gas mark 3.
Place a large sheet of grease proof paper/baking parchment into the middle of a roasting tray.
It needs to be large enough to wrap around the chicken plus plenty of extra for folding over.
Season the chicken with salt and pepper.
Stuff half of the lemon slices inside the chicken and place the bird breast side up in the middle of the paper.
Sprinkle the garlic slices and thyme sprigs evenly over the chicken.
Lay the remaining lemon slices over the breast and fold the paper over the chicken to form a loose parcel.
Bake in the preheated oven until the chicken has cooked, about 1 1/2 to 2 hours or until the juices are no longer pink.
