Home cooked food made with ‘earthy’ ingredients – especially when its cold outside – is just the best way to pick up your mood whilst maintaining a healthy diet.
There’s no need to complicate things.
Eating food made from nature’s raw materials rather than processed food will lift your spirits and clean you from the inside out.
One-Pot Chicken & Sweet Potato
- 2 chicken breasts
- 2 large sweet potatoes, washed and cut into wedges (skin left on)
- 1 pint cherry tomatoes
- 4 large cloves of minced garlic
- 2 tbsp Italian seasoning
- 1/2 tsp cracked black pepper
- sea salt
- olive oil
How To Make One-Pot Chicken & Sweet Potato
Preheat your oven to 180 °F.
Combine potato wedges, a drizzle of olive oil, and half of your seasoning (2 cloves of minced garlic, 1/2 tsp salt, 2 tsps Italian seasoning, and 1/4 tsp of cracked black pepper in a high-sided baking tray.
Really stir (I like to use my hands) the ingredients so they get nicely coated with the olive oil and seasoning and bake for 10-15 minutes or until edges begin to turn slightly brown.
In a large bowl add the chicken breasts, a drizzle of olive oil, and the other half of the seasoning (2 cloves of minced garlic, 1/2 tsp salt, 2 tsps Italian seasoning, and 1/4 tsp of cracked black pepper.
Stir in nicely with a wooden spoon (or use your hands) to make sure the ingredients are fully coated.
Add a drizzle of olive oil to either a skillet or frying pan and brown chicken on both sides by which time your sweet potatoes should be ready.
Remove the sweet potatoes from the oven and add them to the outer edges of the pan, along with your tomatoes.
Cook uncovered stirring occasionally to prevent sticking for another 5 – 10 minutes or until chicken is thoroughly cooked.
