This idea came to me the weekend we broke up for the school holidays.
I’m loving chilli based recipes at this time of year to feel warmer inside and help to stave off seasonal illnesses.
There are very few delicious recipes that are both healthy and make your insides feel better than this vegetarian two bean chilli so I made a massive dutch oven’s worth into and made a pot of it as per the instructions.
The net result?
No weekend binge eating!
No snacking on chocolate bars and crisps.
No falling off my nutrition plan and all because of a simple 20 minute recipe made from fresh vegetables.
This first round of food cooked on a Friday night lasted until the following Tuesday lunchtime!
Yes I’ll be making food on Fridays and Sundays from now on, it’s a game changer!
